Cranberry Bread

Cranberry bread is the perfect treat for the holiday season! With the perfect balance of sour cranberries, crunchy walnuts and sweet bread, what's not to like?

RECIPE:

(Makes 2 loaves)

1/2- 2 cups cranberries (Depends on the amount you want)

1 cup chopped walnuts

I cup sugar

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

1 egg

1/4 orange juice concentrate

4 tablespoons melted butter

Warm water


INSTRUCTIONS:

1. In a large bowl combine dry ingredients

2. Pick through cranberries and make sure there are no soft or wrinkly ones

3. Add cranberries and chopped walnuts to the dry ingredients. Stir to coat

4. In a liquid measurer, measure out 1/2 cup orange juice concentrate. Add warm water to make 3/4 cup liquid.

5. Melt butter and add to liquid. 

6. Add egg to liquid and whisk with a fork.

7. Make a well in the fry mixture and add wet stuff into the well. Fold mixture together.

8. Grease pans with butter. Sprinkle a light layer of flour on the pans.

9. Evenly distribute batter to the pans and bake at 350 for 45-60 minutes. (Until clean toothpick)
