Sourdough Irish Soda Bread
I absolutely love Irish Soda Bread, but adding sourdough takes the flavor a step higher.
RECIPE FROM: FARMHOUSE ON BOONE
INGREDIENTS:
3 1/2 cups all purpose flour, you can also use bread flour
1 tsp baking soda
1 tsp salt
6 TBLspoons unsalted butter, cold and cut into small pieces
1 1/2 cups buttermilk, if you don't have buttermilk, milk and lemon or vinegar works
1 egg
2 TBLspoons sugar
1/2 cup sourdough starter, active or discard. The discard will give it a more sour taste.
Raisins or currants optional
INSTRUCTIONS:
1. Preheat oven to 400
2. Prepare a baking sheet by lining it with parchment paper
3. Add the flour, baking soda and salt to a large mixing bowl and stir to combine
4. Chop the cold butter into small pieces and add the the dry ingredients
5. Using either your hands or a pastry cutter, work the butter into the flour mixture until it becomes crumbly with the butter pea-sized or smaller
6. In a separate bowl whisk together the buttermilk, sugar, sourdough starter and egg until combined
7. Pour the wet ingredients into the dry and stir until just combined. You don't want to over mix. Add your raisins or currants in.
8. Place dough onto prepared baking sheet and form it into a round loaf
9. Score a cross or and X on the top of the loaf. This will help the bread bake more evenly
10. Bake in the preheated oven for about 45-50 min. Check at the 30 min mark. If the top of your loaf is getting to dark cover it with a piece of parchment paper for the remaining time.
11. Bake time will depend on how wide or how tall your loaf is shaped
12. Coal the loaf on a wire rack before slicing. Serve and enjoy!
