How to make Goat Cheese
Hello! Today me and my friends made goat cheese and I thought that I would share with you the recipe, process and some tips :)
Citric Acid?
Most recipes call for citric acid, but I choose to do the lemon juice and vinegar method because citric acid is not very good for you at all.
.Skin irration
Citric acid can cause stinging, swelling or hives if it touches your skin for a long time.
.Eye Pain
Citric acid can burn your eyes
.Tooth problems
Consuming too much citric acid can wear away tooth enamel, making teeth more sensitive and more likely to get cavities
.Upset stomach
Citric acid can cause nausea or vomiting
.Chronic inflammation
Some research suggests that manufactured citric acid may contribute to chronic inflammation, which can lead to conditions like asthma, irritable bowel syndrome and fibromyalgia,

Lemon juice and vinegar is a much healthier and natural way to make your goat cheese!
RECIPE:
(Makes 8 Oz)
8 cup un-pasteurized goats milk
2/3 cup lemon juice
1/4 cup white vinegar
1 tsp salt
OPTIONAL:
1 tsp honey
You can add toppings to your goat cheese like, dried cranberries, walnuts, orange zest or parsley.
INSTRUCTIONS:
1. Pour goats milk into a saucepan over medium heat.
2. Heat milk until it reaches 185 f. Take off heat and pour lemon juice in stirring gently
3. Add vinegar and let the mixture sit for 30 min
4. Place a cheesecloth over a colander and place in a mixing bowl. Pour goats milk mixture over the cheesecloth. As the mixture is draining pour the whey from the bottom of the mixing bowl, into the sink. Let sit for 1 hour (You can keep the whey if desired)
5. Mix salt into the cheese and add honey if desired
6. Grab the corners of the cheesecloth and squeeze the extra liquid out of the cheese.
7. Place a sheet of plastic wrap, beeswax paper, or parchment paper on your counter and add your desired toppings on the sheet. Scoop your cheese onto the sheet and roll it into a log.
8. Place cheese in the fridge, let cool and enjoy!
NOTE: The whey is the liquid that drains from the forming cheese. In order to drain it, take your colander out of your mixing bowl, hold it over your sink and dump the whey from the bowl into the sink.
